New York Cheesecake 🍰
The classic — dense, creamy and tall, with a lightly golden top and a buttery graham crust. One bite and you'll know why it's the most famous cheesecake in the world.
Ingredients
- Crust:
- 1½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup (1 stick) unsalted butter, melted
- Filling:
- 4 blocks (32 oz) cream cheese, room temperature
- 1 cup sugar
- 1 cup sour cream
- 4 large eggs
- 2 tsp vanilla extract
- 2 tbsp all-purpose flour
- 1 tbsp lemon juice
How to make it
- Mix crumbs, sugar and butter; press into a 9-inch springform pan. Bake 10 min at 325°F (165°C).
- Beat cream cheese and sugar until smooth. Add sour cream, vanilla, lemon juice and flour.
- Add eggs one at a time, mixing just until combined — don't overbeat.
- Pour over the crust. Bake 55–60 min at 325°F until the edges are set and the center still jiggles slightly.
- Turn the oven off, crack the door and cool 1 hour inside. Chill at least 4 hours, overnight is best. Slice with a hot knife.
